With our whole, skinned and organic almonds from Trás-os-Montes, dear Ana Rita Lebreiro (@nutripontocome) suggests these almond eggs, which are much healthier than the traditional ones, but still delicious and hard to resist!
INGREDIENTS:
(27 small eggs)
125 ml almond butter
55g almond flour (Organic Portuguese almonds, from Simplu, crushed)
2 tablespoons rice syrup (or maple syrup)
1 tablespoon coconut oil
150g of 70% cooking chocolate
HOW TO MAKE:
In a bowl place the almond butter, almond flour and rice syrup. Mix until it becomes a homogeneous mass.
With the help of 2 teaspoons, form small almond-shaped eggs. Place them on a baking tray lined with baking paper, spaced apart. Take them to the freezer for 30 minutes or to the refrigerator for 2 hours.
Before covering the eggs, melt the chocolate with 1 tablespoon of coconut oil in a bain marie. Remove the eggs from the freezer or refrigerator and with the help of 2 forks, dip each small egg in the melted chocolate. Let them drain well and place them, spaced apart, on the baking paper.
Put them back in the freezer for 10 minutes. Remove and store the eggs in a closed container in the refrigerator. Then, all you have to do is enjoy them. Bon appetit!
