(6 muffins)
95g wholemeal oatmeal
½ teaspoon bicarbonate
1 teaspoon baking powder
½ teaspoon cinnamon powder
60g maple syrup
125g almond drink
3 tablespoons peanut butter
1 teaspoon vanilla extract
1 medium ripe banana
Topping: granola CHOCOLATEMINT
Sieve the oatmeal, cinnamon, baking powder and bicarbonate into 1 bowl. Set aside.
Crush the banana and place in another bowl. Add the maple syrup, almond drink, peanut butter and vanilla essence. Mix well.
Pour the liquids over the solids and mix again until you have a homogeneous dough.
Grease 6 muffin tins with a little olive oil, blotting out the excess with kitchen paper. Divide the batter between the 6 moulds and add a little granola as a topping. Bake at 180ºC for 25 minutes.
When they're ready, leave to cool and enjoy!
