RECIPE // Mini carrot, ginger and turmeric muffins

Our dear Ana Rita Lebreiro (@nutripontocome) suggests this recipe for muffins with an irresistible combination of flavours! 😊💚


(6 small pieces)


45g raw carrot

160ml vegetable oat drink

3 tablespoons of oatmeal

2 tablespoons rice flour

1 tablespoon chia seeds

2 tablespoons olive oil

1 teaspoon sweet cornflour

1 teaspoon powdered ginger

1 teaspoon Simplu turmeric powder

1 and a half tablespoons brown sugar

1 teaspoon baking powder


optional topping: 54g 85% cooking chocolate (2 bars)


First you need to blend the carrot and vegetable drink. Place in a bowl and add the remaining ingredients, except the chocolate. Mix well to make a homogeneous mass. Leave to rest for 5 minutes to allow the chia to moisturise. Divide the batter into small silicone muffin tins. Bake in a hot oven at 180ºC for 35 minutes. Remove and leave to cool.


These muffins are great plain, but if you want to add a topping, melt the chocolate in a bain marie. Divide it among the muffins and you're done. Enjoy!
