RECIPE // Tricolour energy truffles

With our organic, freeze-dried coconut milk powder and our organic, freeze-dried strawberry superpowder powder, we asked our dear nutritionist Ana Rita Lebreiro (@nutripontocome) to create an energising snack, great for any day. The result was these two-coloured truffles that you'll love!


(for about 19 small truffles)



231g cashew nuts

3 Medjool dates

2 teaspoons Simplu strawberry powder

2 teaspoons Simplu coconut milk powder

2 teaspoons raw cacao powder

3 tablespoons vegetable oat drink


Strawberry flavour:


Place 77g of cashews in a food processor along with 1 stoned date. Blend a little. Then add the 2 teaspoons of strawberry powder and 1 tablespoon of vegetable oat drink. Blend again until the mixture is uniform, moist and more combined. Pour into a bowl and set aside.


Coconut milk flavour:


Place 77g of cashews in a food processor along with 1 stoned date. Blend a little. Then add the 2 teaspoons of coconut milk powder and 1 tablespoon of vegetable oat drink. Blend again until the mixture is uniform, moist and more combined. Pour into a bowl and set aside.


Cocoa flavour:


Place 77g of cashews in a food processor along with 1 stoned date. Blend a little. Then add 2 teaspoons of raw cocoa powder and 1 tablespoon of oat vegetable drink. Blend again until you obtain a uniform, moist and more unified mixture. Pour into a bowl and set aside.


Using a dessert spoon, take small pieces of each of the flavours, place in the palm of your hand and then form into truffles (brigadeiro size). Arrange each truffle, spaced apart, in a pyrex covered with a piece of greaseproof paper. Once you've made all the truffles. Put them in the fridge for 30 minutes to thicken a little. Enjoy!
