RECIPE // Chai Cake

Our organic and gluten-free CHAI granola, vegan and made only with natural ingredients, in a very aromatic combination of flavours, was the inspiration for this cake made by our dear nutritionist Ana Rita Lebreiro @nutripontocome. Give it a try and let us know what you think :)


300 ml oat vegetable drink

8g Simplu chai powder

60g olive oil

120g light Greek yoghurt

2 teaspoons vanilla essence

350g wheat flour

100g brown sugar

2 tablespoons cornstarch

1 teaspoon baking powder

½ teaspoon bicarbonate of soda

pinch of salt

½ teaspoon powdered ginger

pinch of black pepper

Topping: CHAI granola

Heat 300 ml of vegetable drink in a small saucepan. When it's hot, dissolve the Simplu chai and mix well. Set aside.

Place the solids, flour, brown sugar, baking powder, bicarbonate of soda, salt, ginger powder and pepper in a bowl. Mix well. Pour the vegetable drink mixture, oil and vanilla extract into another bowl. Mix together.

Add the liquids to the solids and at this stage also add the Greek yoghurt. Mix to form a homogeneous mass. You don't need to stir too much. Pour the cake batter into a silicone cake tin and sprinkle some Chai granola on top. Bake at 190ºC for 45 minutes, or until the toothpick test shows the cake is cooked.

Remove from the oven and allow to cool completely before slicing. Enjoy!
