RECIPE // Christmas Chocolate Cake

With our CHOCOLATEMINT granola, organic and gluten-free, vegan and made only with natural products, we asked nutritionist Rita Lebreiro to create a recipe dedicated to chocolate lovers, very tempting but healthy at the same time! :) You can see from the photo that it looks great and the flavour is second to none.


200 ml apple puree

400 ml vegetable oat milk (or other vegetable drink)

80g almond butter

60g hazelnut

80g coconut sugar

90g oat flakes

100g sweet cornstarch

80g cornstarch

4 teaspoons of baking powder

5 tablespoons raw cocoa powder

pinch of salt


70% melted chocolate (200g)

Reduce the oat flakes to flour and do the same for the hazelnuts. Place both flours in a bowl. Then add the rest of the dry ingredients, the coconut sugar, sweet cornstarch, baking powder, cocoa and salt. Mix together.

Add the apple puree, the vegetable drink, and the almond butter. Mix until it becomes a homogeneous dough.

Pour the batter into a silicone cake tin. Bake in a hot oven (180ºC) for 50 minutes, or until the toothpick test indicates that the cake is cooked. Remove from the oven and let cool completely until you add the frosting and toppings. Enjoy your cake!
